Hey friends! Sorry to be MIA today, but I just got so caught up doing stuff that I never got around to posting! I also forgot that Chad and I were going out of town to Birmingham for the weekend and had to leave tonight! Haha we’re actually on the road now, and typing this on my iPad. Anyway, just because we’re traveling doesn’t mean I can’t fill you in on the day! 🙂
I tried a new kind of oatmeal creation that I saw on Katie’s blog. Frappuccino oatmeal! I decided to add a little cocoa powder and turn in into a mocha frappuccino flavor. And what’s a frappuccino without cool whip on top? Light cool whip of course 😉
I let breakfast digest for about an hour and a half and then went out to tackle a 3 mile run. I was actually hoping to run more than 3, but my knee and leg pains were pretty bad, so I started walking at mile 4. I figured I’d walk the rest of that mile, and then run mile 5 back home. So that’s what I did! 🙂
I jumped in the pool when I got back from my run to cool me off (jealous? ;)) and then showered before snacking on an apple. This is where I made my mistake. You see, I didn’t wait long enough before I ate for my stomach to settle from the run, so about 30 minutes later I was so nauseous I could barely move. I laid down until Chad came home for lunch and, when I felt better, fixed myself something.
Nothing exciting for lunch today, just a boca burger, baby carrots, and string cheese.
I felt so good that I went on over to Dick’s to do a little shopping! 😉
As I mentioned above, I’ve been having bad knee and leg pains during my runs, and I think my Nike Frees just don’t have the cushion I need for longer runs. So, enter in my new Brooks Ravennas! I tried these on and liked the feel a lot better than the Adrenaline, which is what I had been considering. I’m hoping these will do the job! 🙂
When I got home, I started packing for our trip which is really just for Chad, I’m just tagging along. It’s a United Methodist conference and Chad will be getting his pastors license! Proud. 🙂
After packing, I got to work on dinner. We snacked on some cucumber slices while dinner cooked.
On the menu for dinner, was a lightened up spaghetti with meat sauce.
Then it was time to hit the road! We took the doggies to my parents and drove off to Birmingham, making a necessary ice cream pit stop half way through. 😉
Well, it’s off to bed because we’re hoping to get up early for a little workout at the hotel gym before his first session in the morning! G’night! 🙂
Afternoon! Hope you all enjoyed today’s WIAW post! 🙂 Now let’s get back to normal starting with last night’s dinner, and get ready because I’ve been making magic in the kitchen lately! 😉
What you’re looking at right there is a skinny buffalo chicken sandwich with homemade sweet potato fries! Yes, underneath that pile of cheese is chicken. 😉 I started out by making an easy buffalo sauce using Franks and some seasoning and let the chickens marinate in it for about an hour. After marinating, I coated the breasts in breadcrumbs, put more sauce on top, and baked for 35 minutes at 375. The sweet potato fries were pretty easy too! I cut them up, seasoned them with salt, pepper, garlic powder, and paprika, then baked for about an hour at 375.
The best part of this meal was how much Chad like it! It always makes me happy when he likes my new cooking creations.
After dinner we went on an hour long walk with the pups.
We ended up at the park downtown and went down to the water to sit.
Pierre and Sasha were really focused on those ducks!
We got home in the nick of time because it starting pouring about 10 minutes after we walked in the door.
I decided to whip us up a little healthy dessert, and tried Taralynn’s recipe for a twinkie cupcake!
Pretty sure I overcooked them, but they were still tasty! 🙂
This morning I was so mad when our alarms went off at 5 am. It’s summertime, shouldn’t I be sleeping in??!! After Chad forced me out of bed, we hit the gym to tackle arms and chest.

Hol-y COW. I don’t know if I’ll ever get used to working out one muscle group so much. It’s so different than my normal circuits!
I fixed us our usual post-workout omelets when we got home. For me: 2 eggs, spinach, and fat free mozzarella.
Later on in the morning I got hungry again, so I made myself a very simple “chocolate covered strawberry” protein smoothie and enjoyed outside.
In the blender went: 1 cup of frozen strawberries, 1 cup of almond milk, and 2 scoops lean chocolate protein powder.
I really didn’t do much this morning besides a few dishes. I’ve been pretty lazy over here. 😉 But I did fix Chad and I a really yummy lunch! I saw the recipe for skinny white castle burgers called “queen of the castle sliders” in my Hungry Girl cookbook (look up the recipe!) and decided to give them a try.

Deeeeelish! I also had a cup of grapes along with lunch but didn’t snap a picture. I think you know what grapes look like. 😉
I’d say that I’ve been pretty successful over here in the kitchen lately, and I think Chad would agree! 🙂 Too bad dinner tonight wont be as fun. It’s looking like a Subway run before church tonight… oh well!

It’s What I Ate Wednesday! Thanks Jenn!
I told you guys that this would be the most epic WIAW post ever! 😉 I did my best to capture all my meals and snacks, but I have to honest and say that some meals and many snacks are not pictured. It all just depended on my mood whether or not I took pictures. Here’s what I got!
Just a little heads up. This was my dessert every single night at dinner. So I only took the one picture. 😉
No dinner pictures on this night. But we didn’t eat in the dining room anyway. We hit up the late buffet since our other meals had been late too.
That was the last meal I got a picture of, so sorry about that. I can tell you that lunch on this day was nothing but a bowl of fruit because I wasn’t too hungry. Dinner was some kind of chicken, and dessert was obviously the chocolate melting cake. 😉
When we got home Saturday night, we pulled out the top of our wedding cake that we’ve had in the freezer for the last year!
Since we were on the cruise on our actual anniversary (May 21), we ate the cake when we got back. It still tasted good! The icing on the outside had a slight hint of freezer burn, but the cake part and icing on the inside all tasted amazing! 🙂

Our second day of the cruise was not what I’d hoped it would be. I had planned on sleeping in, then laying out by the pool for the entire day! But it was very windy and not sunny at all. Bummer 😦
We did finally get about an hour of sunshine later in the afternoon, so we took advantage of it and found two chairs at the back of the boat!
After our short time in the sun, we went to shower and change clothes and then found a table out by the pool to do some people watching.
Then it was time to get fancy because it was formal night! 🙂
Every night, the cruise has stations set up for fun/casual portraits. But on formal night, they set up portraits that are, well….. formal. haha We went through stopping at most of the stations, and even bought a picture at the end of the week! It was a lot of fun, but we also wanted some on our own camera, so we went outside to take our own portraits! 😉
After a fancy dinner, we changed into more comfortable clothes and went to Chad’s favorite spot on the boat. The very front.
We didn’t go to play golf though. Straight ahead, past the gold course, there’s a doorway to the front deck. It’s SUPER windy. So much that I’m way to scared to even try to take pictures because I’m afraid I’ll lose my grip! Last year we went to that spot every single night because Chad loved it so much. But, this year we only made it one time. Fine by me! 😉
We went back to the room for the night and found our second towelmal!
Afternoon friends! This post is coming to you straight from a lounge chair by the pool. 🙂
That’s right, I’m still in vacation mode! But don’t worry, this isn’t the only thing I’ve done today. 😉 I slept in this morning and then took my time enjoying coffee while reading blogs. Since i slept late and dint get an early morning run in, I plan on running this evening instead so that it’s not as hot!
For breakfast, I decided to actually cook my oats on the stovetop! I love my cold oats, so I’ve never done this before. I boiled 1/4 cup of almond milk and 1/4 cup of water. Then I added in 1/3 cup of oats and let it cook for 5 minutes. I threw in some peaches and strawberries at the end, and the results were so yummy! 🙂
After breakfast I knew I had to tackle a very big mess in the sink.
I got the cleaning done and then made some lunch for me and Chad.
Chad went back to work, and I decided make home jealous by coming out here to relax. 😉

Here it is, my first recap of our cruise! I’ll do my best to fill you in on all the deets, but I’ll be leaving out the food part of this vacay and saving it for this weeks WIAW post. 🙂
After an unbelievably stressful day of flying (delayed flights, missed connections, sprinting through airports), we made it to our hotel in Jacksonville after midnight on Sunday. That made getting up this next morning a little difficult, but we were so excited that it didn’t matter how tired we were! After breakfast, we took a shuttle to the boat and since we were VIPs, got on the boat in no time!
Our first stop was lunch, then we explored the ship a little, even though we’d already been on it before. 😉 We ended up checking out the gym which we never saw last year. It was pretty good with a lot more equipment than I expected. *Note: We never actually used the gym ;)*
After goofing around for a little while, we went down to get our first of way too many ice cream cones of the trip!

When our room was ready, we went to see if our luggage had been delivered.
Nope. So with no luggage, that meant no clothes and no bathing suits which meant we couldn’t swim or lay by the pool to pass the time. So we just found a chair at the back of the boat while we waited to sail away.
After laying around in the hot sun wearing normal clothes, we felt pretty gross so we went back to the room to shower and get ready for dinner.
We decided to have a fun little photo shoot. 😉
After dinner I participated in a fun little trivia game on stage. We had to choose either answer A or B by walking to one side of the stage. I was pretty terrible. haha!
We even took a ballroom dance class afterwards! But I didn’t get any pictures of that one.
We ended our night listening to some music in a cool little piano bar. Look at this table!
You can see in these next pictures that the walls were piano keys too!
We found this little guy waiting on us when we got back to our room.

Our first day was definitely a success! 🙂
We’re back from vacation!!! 🙂 I promise I will have recaps of our cruise later, but today is Memorial Day and I’m so excited because we’re spending the day with my family! We get together every Memorial Day at my grandad’s to swim, grill out, and visit. I’m ready for a fun-filled day! Didn’t I just get back from a cruise?? 😉
Chad and I started out morning off at the gym! We’re starting a new thing where we actually workout together 3 times a week. Yes we normally are at the gym at the same time, but he’s always doing his thing while I do mine.
My BIL, Joe trains for fitness competitions and also trains other people, and he gave Chad a workout plan to follow back in February. Chad had been loosely following the plan, but we decided last week that it might be fun for me to join him in the workouts!
We started this morning with legs. OMG. Since I usually do full body circuits, I was so not used to working my legs that much in one workout! It looked like this…
My legs were shaking SO BAD. We had to re-arrange the workouts so that we do legs on Mondays because my long runs are on Saturdays, and I don’t want my legs to be too sore.
After our workout, we came home to get some breakfast! 2 egg, ham, cheese, and spinach omelet for both of us! 🙂
Btw, Chad has decided to start following the same healthy eating plan as me! 🙂 I’m excited because he’s going to be trying all the foods that I’ve been enjoying over the past 9-10 months! He’s already doing awesome by measuring his food and counting his fat/calories with an app on his phone. I’m so pumped that he’s going be eating healthy with me!
After breakfast, we had a big job to tackle. The grass. It was in desperate need of cutting. So Chad and I made a deal that I would cut as much as I could while he was weed-eating then he would take over. I got almost done with the main part of our yard when Chad finished, but instead of taking over for me, he decided to take pictures of me. Thanks Chad… thanks.
Chad eventually took over to cut the grass in the front yard and the little side strips by the road. I thought I was done, and then my dad asked me to cut the grass by the pool. I know he wouldn’t have been mad if I had said no, but I was feeling extra nice this morning. So I got his bag mower out of the shed and got to work by the pool. Words can’t describe how sweaty I was. I don’t even think I’ve been that sweaty during a run! But at least it was some good cardio for the day. 😉
After I showered, I needed some carbs in my belly to recover from all that mowing! Enter 1/2 and English muffin with almond butter…

Well it’s about time to head out for some fun times with the family! I hope everyone has a wonderful Memorial Day! And let’s not forget the reason that we have this holiday. Thank a Veteran and remember those we’ve lost.
