Skinny Chicken Nachos {And 6 Miles!!}

Hello! I’ve got lots of fun things to share with you today… for example, last night’s dinner!

Chad and I love Mexican food, and especially love the chicken nachos from Casa! (for those who don’t live around here, it’s a hole-in-the-wall restaurant that everyone goes to when they want good, greasy, Mexican ;)) But, we don’t order that dish any more because of our healthy eating plan, so I thought, I’ll make it myself! And I did! 🙂

Ingredients:

1 serving of Baked Tostino Scoops, 4 oz. shredded chicken, 1/2 cup of mixed peppers, 1/2 an onion, cheese of choice. (I didn’t have the right cheese, so I took a light cheese stick, about 60 cals, and shredded it myself)

Directions:

Cook the chicken however you’d like. I put mine in the crockpot for a few hours. Sautee the pepper and onions. Place the chips in your dish, then add chicken, peppers, and onion. Sprinkle cheese on top and stick under the broiler for 3-5 minutes.

Mine came out to be right about 330 calories and was very tasty! 🙂

Before dinner, we had to give our pups a bath. Sasha went first…

then Pierre…

We had to get the hair out of his eyes, so what better way than a mo-hawk?

We had to let them soak so the flea medicine would work, and he just sat there looking at us like “what have you done?” haha

Pitiful creature. 😉

Fast forward to today………

Workout

I woke up at 6:30, ate a piece of toast, and then set out on my first 6 mile run this morning. Whew, it was hard! But, by mile 5, I was so excited to finish that everything just felt easier. I finished in 1:07.

Breakfast

I prepped some pancake batter last night so that breakfast would be easy.

These were yummy banana pancakes that I made using 1 banana, 2/3 cup of oats, 2 eggs, 1 container of vanilla greek yogurt, and 1 tsp of cinnamon. The batter made two servings. It was a perfect post-run breakfast!

Also with our pancakes, we had some homemade iced coffee. It tasted pretty good, but after running I just wasn’t in the mood for coffee.

After breakfast, we drove over the Florence to run some errands and then to buy dog sheers because our little fur-baby Pierre is getting gromed this afternoon! 😉

Lunch

We didn’t get home until almost 1:00, and were starving, so I made lunch as fast as possible!

Cucumbers, carrots, hard-boiled egg, and a big blob of hummus for dipping. YUM! 🙂

I’ve got some housework to take care of, and then we’re going to my parents’ for dinner tonight. A nice relaxing Saturday for us. 🙂
