Yesterday I started feeling a little under the weather. It got progressively worse throughout the day, and I ended up going to bed feeling terrible. I took some allergy/cold medicine hoping I’d feel better in the morning. When I woke up, I felt WORSE. 😦 But despite feeling like a big sack of poop, I still had to put on a happy face and come to work to teach my babies some music! (Don’t worry parents, I don’t have a fever, and I’m washing my hands and pumping germ-x like crazy!)
I love being a “grown up” and having a full time job, but one thing I miss about college and high school is being able to stay home when you’re sick. Not that I can’t stay home from work when I’m sick, but I’d rather use my sick days for when I’m REALLY sick. It definitely took a lot of energy to power through this day!
Last night, even though I was feeling bad, I decided to be productive and prep today’s breakfast AND lunch. So when I woke up this morning, I didn’t have to do anything!
An old favorite I haven’t had in a while. Overnight oats in a jar! 🙂
It was also a THREE cups of coffee kind of morning. 😉
Light tuna salad and string cheese. I made the salad using 1 can of tuna, 1 tbs of light mayo, 1 tsp of dijon, chopped pickles, and 1 hard boiled egg. Very filling!
I also had an afternoon “treat.” Usually I drink nothing but water all day, but I brought with me a big cup of sugar free peach tea (made with the crystal light packs) to enjoy during my afternoon planning time. 🙂 Little motivators here and there work wonders!
I wanted nothing more than to just go home and collaps on the couch after work today, but I knew that I would feel SO much better after my run!
I’m going to be fixing a quick dinner for husband and me, then I have a meeting at 6:30. Dinners options are starting to look slim, so a grocery trip is MUCH needed this weekend.

Happy Wednesday!! As you know, Wendesdays are my longest and craziest days. BUT, I actually found time this morning to write a What I Ate Wednesday post because I didn’t go to the gym. Hubby and I decided to take a week off from lifting because we could tell we were getting a little burned out. No rest from running for me though! I’ll be at the gym this afternoon for a 4 mile tempo run. Yay! (It’s a little sad that I really am happy about that 😉)
Anyway, back to WIAW! Thanks to Jen for hosting! 🙂
This edition of WIAW contains a lot of random meals. Dinners from the past couple of nights, a few breakfasts, but only one lunch to show. I’ve been bad about getting pictures of lunch… probably because I only have 30 minutes to eat between classes, so I scarf it down as fast as possible. Here we go!
Dinner 5 nights ago on Friday:
It was just me at home for dinner, and we all know how I like to eat random things. So I baked a sweet potato and put a blob of almond butter on top. then roasted some yellow squash along with it.
Here’s dinner from Monday night:
Seasoned baked chicken with lots of roasted burssels sprouts!
Last night’s dinner:
Pan “fried” chicken with a sweet potato. I used a homemade seasoning for the chicken that turned out awesome! I’ll have to post the recipe soon.
Breakfast from yesterday:
A CHO-mazing yogurt bowl with plain Chobani, strawberries, cinnamon, and peanut butter.
Breakfast this morning:
You may not be able to tell, but this is a HUGE omelet I made this morning with 1 egg and 3 egg whites. Spinach and fat free chedder inside! 🙂

This was a PB and pumpkin butter sandwich, baby carrots, and a blueberry Chobani. I was really craving peanut butter and jelly, but I saw the pumpkin butter in my fridge and thought it would make an insteresting and delicious combination. And i did! 🙂

Happy Tuesday everyone! Hope your day has been a good one! Not much in the food department to share with you today because I’m saving it for a WIAW post! But I do have a few random questions to ask you guys. These are things I’ve been pondering lately and wanted to get some other opinions.
Why does coffee always taste so much better in the morning?? I fixed a cup this afternoon to help wake me up, and it just didn’t taste as good or sit right in my stomach. I always enjoy coffee so much more in the morning!
Why, after a day of way too many “indulgences,” is it so much harder to get to the gym for a workout?? Sunday I ate wayyy too many sweets. So you would think that I’d be more motivated to workout Monday morning. NOPE. We straight up skipped our Monday morning workout because I couldn’t bare the thought of getting up at 5 am.
Why do I feel “unworthy” of calling myself a runner?? I’ve only been running for about 7 months, and even though I’ve done two 5ks and a 5 mile race (and placed 2nd is two races!) and am training for a half marathon, I still feel like I shouldn’t call myself a runner. This needs to stop. I mean, I RUN. Therefore, I AM A RUNNER! 🙂
Why does pumpkin go good with everything as long as it’s fall?? I don’t know, but I don’t care! Bring on pumpkin season!!
Why do I let calorie counting control my eating habits?? Ugh… something I struggle with daily. I think it’s a control issue with me. I know that if I’m counting calories, then I have control over how many I put in my body. But if I stop counting, then I let the food control me and it’s like I haven’t eaten in weeks! I feel the need to try every “unhealthy” thing before I go back to calorie counting again. This doesn’t happen as often as it used to because I’ve worked really hard at getting away from that mindset. Oh but it definitely creeps in every now and then. *ahem, Sunday*
Why am I always LESS hungry on days that I run than days I don’t?? I think I read somewhere that exercise suppresses the appetite? It’s weird to me though. You would think that after burning calories, you would feel more hungry?
Why do I sweat in just one oval shaped spot??
Someone give me a WHY? question, and I’ll do my best to answer!
Want to know how to have a SUPER Saturday???
Step 1: Enjoy coffee outside on the deck and follow it up with a delicious pancake for breakfast.
Step 2: Take your 6 mile run out to a nature trail for a change in scenery. Stop and take a picture half way through.
Step 3: Finish your 6 miles with a new PR of 1 hour! 🙂 Collapse on the curb and take a post-run picture.
Step 4: Recover in the best way possible. “Homemade” chocolate milk and an ice bath!!
Step 5: Enjoy a delicious lunch complete with an extremely sloppy omelet and a very creamy strawberry banana Chobani!
Step 6: Get a MUCH needed hair cut!
Step 7: Enjoy the most delicious afternoon snack that you saw on Tina’s blog this morning! 1/2 cup of blueberries and a tablespoon of almond butter warmed up in the microwave!
Step 8: Relax and get ready for a fun night at the drive-in! I’m going to see “Paranorman” with our 9th and 10th grade Sunday school class. I’m so excited because it looks so cute and funny!

I could not be more ready for this week to end… not because I need a restful weekend, but because I’m ready for next week to start so I can finally have some babies to teach! Having no students has made this week draaaag on forever! I know I shouldn’t complain, but there’s only so much planning I can do before I run out of ideas. I’ve turned myself into a teacher’s aid this week just so that I could keep myself busy. I know the teachers didn’t mind that at all. 😉

Yesterday, I had planned on doing a WIAW post, but obviously that didn’t happen. Wednesdays are probably my busiest day of the week. My Wednesdays for this year look like this:
5:00 Wake up
5:30 Arms and Chest workout
6:30 Get dressed/Eat breakfast
7:20 Leave for school
7:30 3:15/3:30 Work
3:30 Mid-week Tempo Run (4 miles for today)
4:30 Shower/Get Dressed/Prep Dinner
5:00 Praise Band practice
5:45 Dinner at church (brought from home)
7:15 Choir practice
8:30 Come home/prep meals for the next day
9:00-10:00 HOPEFULLY be in the bed!
I literally go non-stop! The good thing is that once Wednesday is over, it’s smooth sailing to the weekend! 🙂
So now it’s Thursday, and I thought I’d do another edition of Thursday Thoughts because I love being able to tell you the most random things in bullet/numbered form so that it seems organized and not spastic like my brain really is by this day of the week. Wow, was that the most awesome run on sentence you’ve ever heard??
1. I had a 4 mile tempo run on the treadmill yesterday after work. (I also had a 3 mile run today)
Yeah, I ran 11 minute miles. Obviously my goals for my race pace are not very high. 😉
2. The weather seems to be cooling off already in the mornings and at night. I’m getting a little too excited for fall right now and have already started budgeting my paycheck for pumpkin.
3. In relation to number 2, the afternoons are still hot as hades, so I’m still taking my runs to the gym. But, I cannot wait for the day when I can do my afternoon runs outside! Until then, I’ll rely on my trusty iPad to get me through the boring runs. 😉
4. I wore the same shirt to work today that I wore to church last night.
It’s a little scary how much I don’t care about that either. I mean, I only wore it for 3 hours yesterday…. surely it’s clean enough for another 8 hours on my body right?
5. I couldn’t decide what to bring for lunch today. I like to try to get in a lot of protein so that I can make it through the rest of the school day and through my afternoon run. (I do drink aminos before I run to give me some energy though) So this morning, I grabbed all the protein in my fridge and threw it in the skillet. 1 egg, 2 egg whites, grilled chicken, chedder cheese, and spinach. Weird? Yes. Delicious? YES!
Also, there were some baby carrots on the side just because I like them.
6. I haven’t bought any almond butter lately because I don’t trust myself around it. It’s sad isn’t it? If I put in on or in something, then everything is okay. But, if I ever try to just have a little spoonful or quick finger dip in the jar, I GO CRAZY. One night, I was eating spoonfuls of it and didn’t realize how much I’d eaten until HALF the jar was gone! I tell you this because I want to be real and honest on my blog. I don’t want to act like I’m healthy every waking moment of my life, and then hide behind my computer with my jar of almond butter. I guess it’s just one of those trigger foods that sends messages to the hungry monster in my belly. You’re welcome for the awesome analogy.
7. Every summer and Christmas break, I gain weight. It’s inevitable. This summer hasn’t been too bad because I’ve kept up with exercise and mostly healthy eating. But still, it happens. So yesterday, I broke out my “fat pants” to wear to work because my regular dress pants were feeling uncomfortable. Someone saw me and said “Oooh look at you! Pants are falling off you cause you’ve lost weight!” I didn’t want to explain that these were actually my fat pants, so I just laughed and took it. Now I know the secret to looking like I’ve lost weight. 😉
8. I’ve been working on this post since this morning and just randomly adding things throughout the day. With that said, I came home from the gym this afternoon to find that Chad went to Walmart to surprise me with a few groceries…… He bought almond butter. I guess we can just throw number 6 out. 😉

10. I really wanted to get to number 10, but I just don’t think I have any more thoughts. So HAPPY THURSDAY! 🙂

This morning when my alarm went off, I practically bounced out of bed. This was a serious shocker to me because normally in the mornings, I’m a little bit like this…
Since I was up and ready earlier than usual, I had enough time to enjoy coffee while reading some morning blog posts. Usually I’m running out the door with my coffee in a travel mug. It was a nice change and made for a less stressful morning. 🙂
Breakfast this morning was another yogurt bowl of plain Chobani, vanilla, splenda, cinnamon, chopped apple, and peanut butter.
I was productive and packed my lunch last night so that I could grab it before work this morning. It was a good one!
Spinach, chicken, and egg salad with hummus for “dressing.” I also had one of Yoplait’s new strawberry greek yogurts. Ehh, it was okay. I love Chobani, Oikos, and Fage SO much more!
3 mile run on the treadmill after work. Man it feels so good to sweat after a long day! Bring on those endorphins!
Protein shake to recover… enjoyed outside with my doggies. 🙂 This also doubles as my afternoon snack because after one of these, I’m never hungry for anything else.
I’m on my own tonight for dinner because Chad’s gone to a meeting, so you know I’ll be eating something random. 😉
