Hello! I’m having an amazing spring break so far, and I thought I’d pop in and talk about what I’ve been up to this week! 🙂
On Monday I woke up early to get in a good workout before the day started.
I went through the infamous “leg torture” workout and also added 45 minutes on the elliptical since I knew that I’d be splurging on pizza and dessert for dinner. A hard workout meant a giant protein pancake with almond butter for breakfast!
Later that morning, I forced Chad to go Easter dress shopping with me. 😉 He got off pretty easy because I found my dress at the first place we stopped. I can’t wait for Easter Sunday when I can wear it!
I spent the rest of my time before lunch cleaning off my dresser and putting clothes away. That was definitely needed because some of those clothes had been laying on my dresser for MONTHS.
After lunch, Chad and I went to the store to get the ingredients I needed to make dessert. I made smore’s bars that I saw on Pinterest and, like a terrible blogger, didn’t get a picture of them. So here’s a picture of what they basically looked like. 😉
And here’s the link to the recipe. They were seriously delicious! We ordered pizza that night and just had a good time pigging out. Sometimes you just need a “fat night.” haha
Tuesday morning I woke up with a total food hangover. The only thing that could make me feel good was a little sweating. So I made my way to the gym to get in a quick HIIT workout.
I felt much better after that! As soon as I got home, showered, and cleaned the kitchen, Chad and I headed out for lunch and a movie. We had a gift card to Olive Garden, and the soup and salad was calling my name!
That salad is like CRACK.
After lunch we spent a few hours going to some different stores around town before our movie started at 3:45. We made a very important stop at GNC for some necessities.
We ended up having a lot more time to kill than we thought, so we found ourselves at the mall just sitting around being bored. We were sitting outside the arcade when we both got a brilliant idea……..
Playing in the arcade like little kids was so much fun! We had just enough time to get to our movie once we were done.
We saw Identity Thief. It was pretty funny, but maybe a little drawn out and boring at times. If it was 30 minutes shorter, it would’ve been much better.
By the time we got home, it was dinner time. Thank goodness I had dinner waiting in the crock pot because I was not in the mood to cook.
I threw some frozen chicken breasts, frozen corn, and a jar of salsa in the pot and cooked it on low for 8 hours. Then I shredded the chicken and sprinkled on some shredded cheese until it melted.
This morning, Chad came with me to the gym, and we did a chest a triceps workout. My arms are still shaking as I type!
Breakfast was another protein pancake. I can’t get enough of these!
Today’s agenda is a little different than the past two days. Chad’s working and I’m spending the day finishing project clean room and working on some lesson plans for the next two months of classes. Not the most fun day, but it’s got to be done. I’m hoping to squeeze in some time for a haircut this afternoon as well! Then tonight we have church where we’ll be showing the youth The Passion of the Christ in honor of Holy Week. It’s an intense movie, but so amazing.
So now that I’ve caught up, it’s time for me to get to work before the day runs away from me. Have a good one! 🙂
We had a 2 hour delay this morning because of weather, so that means I have a 5 hour work day and then it’s SPRING BREAK!!!!! I cannot contain my excitement!! 🙂 Let’s celebrate “Five Things Friday” style!
1. Monday Dinner: Parmesan tilapia, roasted corn, and asperagus
2. Tuesday Dinner: Buffalo turkey burger on spinach, green beans, and a sweet potato
3. The usual lunch I take to school: Spaghetti squash, chicken, laughing cow cheese, with buffalo sauce mixed in. Plus some veggies and a fruit.
4. Wednesday and Friday Breakfasts: Protein pancake with almond butter and a little sugar free syrup
5. Thursday Dinner: Fajitas at Casa with Chad and my mom! 🙂
1. Let’s pretend that my grocery trip on Monday counts as workout #1 for the week. 😉
2. Tuesday Speedwork: 1/2 mile warm up, 4×400, 1/2 mile cool down
3. Wednesday Strength: Triceps and Chest
4. Thursday HIIT: 10 minutes of HIIT with a warm up and cool down, plus a 1 mile progression run
5. Friday Strength: Biceps, Shoulders, and Back
Five Things I’m Doing During Spring Break
1. Cleaning. I’m not too thrilled about cleaning, but I am excited to actually have the time to get it done! My dresser is starting to overflow with clothes I need to put away, and I can’t get to my closet because of all the shoes in my floor. 😉
2. Getting my hair cut!! I really am excited about this one. It’s been almost 8 months since my last haircut, so this is much needed!
3. Going golfing with Chad. He always talks about how he wants to take me golfing. We’ve only been once together, so we thought spring break would be the perfect time to go again. I’m not very good, but I like riding the golf cart. 😉
4. Shopping for an Easter dress! I usually wait until the last minute to get an Easter outfit, and this year is no different. But this time I have a whole week to shop instead of just a weekend. And if I don’t find an outfit I want, then I’ll use that money to get a massage. Lord knows I need it with my tight neck and shoulders.
5. REST, RELAX, & SLEEP! I’m just so excited to not think about anything for a few days. My brain desperately needs this time to shut off.
I’ve got a long run on the schedule for tomorrow, and like I said before, it’s supposed to rain. But a few people have almost convinced me to give “rain running” a try. So I might be trying it out tomorrow if it’s not too cold. That’s a huge IF though. 😉 Well guys, have a fabulous weekend!!

1. Two work days until spring break!!
2. It’s freaking freezing and might snow tonight. Happy second day of spring Alabama.
3. Spring break is almost here!!
4. It’s also supposed to rain Saturday, so I’ll be attempting a 9 mile run on the treadmill…………
5. I cannot focus on anything besides spring break!!
6. My 3rd graders have their mini musical this afternoon and tonight. We’ve been practicing for two months. I think I never want to here these songs again.
7. Did I mention spring break?
8. Last night, I followed the advice of a co-worker and went to bed 2 hours later than normal. He told me that going to bed as early as I do (8:30) is making me more tired during the day. The result? I overslept my morning workout. Now I have to go to the gym between work and the 3rd grade show tonight.
9. This week is “Talent Week” in all my music classes. Basically the kids get to have a talent show during their music time. It’s been a very interesting week so far. I’ve seen cartwheels, forward rolls, karate moves, “tap dancing”, and a lot of strange tricks. These kids can do it all. 😉
10. SPRING BREAK.
I call these recipes, but really I’ve just adapted things I’ve seen on Pinterest to fit my dietary needs. Usually, I’ll see food on Pinterest and instead of going to the link to get the recipe, I’ll just figure out a way to make it myself. Here are some things I’ve tried recently.
Philly Cheese Steak Stuffed Peppers
These were super easy and so delicious. You’ll need:
- Green bell pepper (cut in half, seeded, etc.)
- 1 small-medium onion
- 1/2 cup of baby bella mushrooms
- Reduced fat Provolone cheese
- All natural roast beef (I used Oscar Meyer, but fresh cut from the deli would be best)
Cook mushrooms and onion in the skillet until caramelized. Place 1/2 of a slice to 1 slice of provolone cheese inside the bottom of each pepper half. Layer the roast beef and cooked onion inside the peppers. Place another 1/2 slice to 1 slice of cheese on top. Bake in the oven at 400 for 15-20 minutes, or until cheese is golden brown. This recipe serves 1, but feel free to double, triple, quadruple to your heart’s desire!
Cheesy Chicken, Broccoli, and “Ranch”
This recipe serves 2. I cooked this dish in the crock pot, and it was so easy, simple, and yummy!
- 2 frozen chicken breasts
- 1 bag of frozen broccoli
- 1 bottle of Walden Farms calorie free Smokey Bacon Ranch sauce
- 1/2 cup of reduced fat chedder cheese
Are you ready for this?? Spray crock pot. Put in the chicken and broccoli. Pour bottle of WF sauce on top. Cook on low for 6 hours. When it’s ready, sprinkle the cheese on top and let sit for another five minutes. EAT! 🙂
- 2 med-large zucchinis
- 1/2 cup rice cereal
- 1/2 tbs garlic salt
- 1 tbs grated Parmesan cheese
- 1 tsp black pepper
Slice zucchini into thick wedges. Crush the rice cereal and add in garlic salt, pepper, and cheese. Spray zucchini with a small bit of olive oil spray and toss in mixture. Bake at 375 for 30 minutes. Boom.

Hello hello, and happy Tuesday! I finally found some time to sit down and write after our youth retreat this past weekend. It was a BLAST! First of all, the weather was amazing! It made being at camp even better. On the morning of our first full day, I got up super early for what was supposed to be an 8 mile run. I only got in 7.5 miles, but I’ll take it. 😉 It was definitely a beautiful run.
The main part of the day was spent here…
That’s the Alpine Tower. Almost everyone made it to the top, including me! Some kids even climbed 3 or 4 times. After the tower, we did something called The Swing. It’s exactly what it sounds like. Basically, you’re strapped into the harness, and the people on the group actually pull the rope that pulls you into the air… HIGH. Then, you have to let go of the rope that’s keeping you up and swing down to your death. Not really…. It’s pretty scary though. Here I am mid-swing
There were also some team building activities that the youth did which were fun to watch. In between all of our fun stuff, Chad lead a few sessions that were focused on leadership. He ended the last session in prayer with all the kids huddled together.
Before we left for home the next day, we drove up the mountain to get some group pictures. And a picture of me and Chad of course.
It was such a fun weekend! But yesterday it was back to reality when my alarm went off. I was bad and skipped a morning workout, and then realized that I couldn’t go after work because I still had to go grocery shopping. Monday evenings at Walmart are NO FUN. 😦 I was at least able to make a really yummy and healthy dinner last night! Parmesan tilapia, asparagus, and roasted corn.
As for today, I forced myself out of bed for an early morning workout. Today it was a speed session on the treadmill. Half a mile warm up, followed by 4×400, and half a mile cool down.
I’m having hard time staying motivated this week because spring break is next week!! It’s so close that it’s hard to focus on anything else. But our 3rd grade show is this Thursday, so I’ve gotta keep pushing through to make it great! Just 3 more days and I’ll have a little freedom!! 🙂
I’m off to figure out dinner. Remember that time I used to make a meal plan? Have a good one!
Well guys, just when I thought I was back in the blog game, I went and got myself sick. Boo. 😦 Sunday afternoon was when the bug/virus hit me, and I wasn’t able to go back to work until Wednesday. So, needless to say I haven’t felt like doing much of anything. It’s been six days, but I’m back again! I’m going to rewind wayyyy back to Saturday because that’s the only day that I actually did anything besides lay on the couch and feel miserable. hah!
I ran the Huff n’ Puff on the Bluff 15k with Team Total Health that morning, and it was SO tough. I thought I was prepared for this race… I was prepared for the mileage, but I was not prepared for the HILLS. This course was seriously 9.3 miles of rolling hills of torture. When I crossed the finish line at 1:31:40, my legs practically gave out, and I just laid on the ground as you can see in the picture below.
Don’t be fooled by my smile. I was laughing to keep from crying/vomiting. 😉 I ended up coming in 4th in my age group, missing the 3rd place trophy by 3 minutes. Grrr….. next time! And look, I found my aunt Lisa at the finish line!
After the race, a long shower, and some lunch, Chad and I headed out into the woods with some friends from church to do a little shooting.
I tried skeet shooting a little bit but was pretty terrible. I came to the conclusion that I only like to shoot at targets that don’t move.
We were out there for about 5 hours shooting and hanging out. Normally I wouldn’t like being out there for that long, but I really had a lot of fun. I’d do it again! (And Chad rejoices)
Sunday, right around the time I started to get sick, I had my audition for Les Mis! It went pretty well, and now I’m just playing the waiting game. We’ll hopefully have some information about the cast by the end of the month!
Between then and yesterday, I really didn’t do anything because of being sick. I went back to work Wednesday, but I took another rest day from working out. I could tell my body wasn’t ready for that yet. Thursday morning however, I was itching to run! I started off easy with some walking and light running. Then I did a little HIIT for 10 minutes and went back to walking for the last 5-10 minutes. Nothing too crazy, but at least it got me sweating.
This morning I got up and drug Chad to the gym with me. Fridays are usually shoulders and back days, but we decided to do biceps and back so we could get in a little arm strength training too.
Once again, it’ll be a few days before I check back in here. We’re taking our youth away for the weekend on a retreat at Camp Sumatanga. We’ll be doing team building activities and climbing one of those big towers, so I’m pumped for a weekend of being active and having fun! I’ve also got to get in an 8 miler tomorrow morning. I love running at camp! 🙂
Hopefully I’ll be back to my normal blogging soon, plus I’ve got some recipes I need to share! Anyway, thanks for sticking with me through all this craziness!

Yeah….. so I took a little 4 week hiatus from blogging. I didn’t plan on this long of a break, it just kind of happened. It seems that when I’m not actually reading other blogs (because of my Lent promise), then I don’t have the motivation to blog myself. But I want to change that. It’s crazy how much more time I have now that I don’t obsess over reading through every blog on my reader. I definitely don’t want to go back to constantly reading and adding new blogs after Lent is over, but I do want to continue to blog for myself. I think my plan for after Easter is to go through and only keep the blogs that I’m truly interested in and to hopefully keep that number reasonably low.
Okay enough of that, let’s get to some good stuff. Even though I haven’t been blogging about workouts, food etc, I’ve definitely been busy.
Strength training is going good! Those leg torture days are still killer, but I can tell I’m getting stronger. Now it’s time to increase the weight! I’m really starting to see definition in my arms and shoulders, which is awesome. Now I’m just waiting the those back muscles to catch up. 😉 I’ll work on some progress pictures soon so you can see for yourself!
I’m still training for the RnR Country Music half in Nashville on April 27, so there’s a lot of running happening. Right now, I’m not following a strict training plan. I get in a good long run on Saturdays, and on Tuesdays and Thursdays I’ll do some HIIT on the treadmill for about 20 minutes. The HIIT workouts only get me up to about 2.25 miles which has been okay for now. I ran 8 miles last weekend (in the snow!) and have a 15k race tomorrow. After that, I’m going to start training a little better by doing one HIIT workout a week, one short tempo run, and a long run on the weekend. Hopefully that will get me in tip-top shape for the half! 🙂

lol I’ve actually had some pretty good meals the past few weeks. Chad mentioned that he had been feeling like we were in a food rut, so I’ve been trying to mix it up a bit with dinner. Here’s a look at what I’ve been creating!

- Cheesy chicken and broccoli in a creamy ranch sauce (made in the crockpot)
- Zucchini “fries”
- Baked chicken parmesan
I’ll try to get some of these recipes up soon so you can try them for yourself! Well… except for the taco salad, I think you can figure that one out for yourself. 😉
As far as life goes, I’ve been working hard at school to get ready for our 3rd grade musical in two weeks. We’re doing the cutest show called HATS! And it’s about…… hats. Duh. 😉
I’ve also been preparing for an upcoming audition at our community theater. They’re making my dream come true and doing Les Miserables this summer! Of course there are hundreds and hundreds of people auditioning, so I’m not getting my hopes up at all. I’d be thrilled with any part in this show, but I’ve been preparing for the role of Fantine. Let me tell you something, I Dreamed A Dream is not an easy song to sing! Last weekend I performed the song in a local variety show that our community put on as a fundraiser. It was kind of like a rehearsal for my audition. It wasn’t bad, but it was definitely not as good as I need it to be. My audition is this Sunday, so I’m working hard and practicing to make sure I’m ready! The only down side to auditioning on Sunday is that I’m singing a special in both services at my church. Hopefully the singing wont tire my voice out before the audition. Fingers crossed and prayers are welcome! 🙂
So that’s my life lately. I’m glad to be back in the blogging business again. I definitely missed it! 🙂
